Antica Ardenga, a member of Slow Food Presidium Consortium, is a small company that produces typical of Bassa Parmense, a coastal area of ​​the Po River, ideal for the production of high quality local meats. The best known is "Culatello", King of Italian butchery. Production is concentrated in winter: the harsh climate and fog allow the meat to be processed in the traditional way. The humid cellars, the weather and the prevailing fog contribute to its uniqueness. Traditionally, pigs were born and raised in the company, slaughtered at 14 months, around 240 kg. Everything is OGM free.
