The Val di Lama farm, in its company oil mill, extracts from its freshly harvested olives, oils with different flavors and aromas. The pressing is in continuous cycle, the temperature of the dough is kept constant from 24 to 26 degrees during the whole process. The oil that has just been extracted is filtered to maintain its properties for a long time, bitter and spicy, rich in polyphenols that with a constant use of oil, considerably help to maintain our health.
