The Pastificio Caponi is a Tuscan pasta factory, which produces dried egg pasta since 1953. The factory exclusively produces “laminated” pasta, following a processing cycle almost entirely manual, carrying out a meticulous research of raw materials. The dough is made only durum wheat semolina and eggs and all the working is made for a 75% by hand and it is conducted at room temperature: with this processing, the quality and pigments are kept.
It is for that reason that our products are limited and it is intended for a customer niche, lover of good taste and Italian culinary traditions.
