Carma Care is an Italian innovative startup developing a proprietary technology for the mechanical treatment of dough. The solution acts on the structure of gluten during processing and is designed to enable new applications in the food industry, with particular focus on needs related to gluten sensitivity. Patented in Italy and currently undergoing international extension, the technology is the result of approximately seven years of development and testing in collaboration with the University of Brescia, the University of Padua and CNR.
