Montasio is a PDO cheese of Alpine origin, which officially appeared for the first time in a price list of the City of Udine in 1773, whose production area includes Friuli Venezia Giulia and eastern Veneto. It is characterized by simple ingredients: fresh milk, salt and rennet, by a soft processing that enhances the characteristics of the raw material and by a balanced composition combined with a high nutritional value. Montasio PDO is available in four different ageings and is naturally lactose-free.
