La Casara Roncolato was founded in the 1920s on the hills of Roncà (Brenton), between Verona and Vicenza. Today, it is run by the brothers Giovanni, Gildo and Letizia Roncolato, who create appealing dairy products, like Monte Veronese, according to tradition and experience. They also make goat and sheep cheese, mainly focusing on Alpine cheese. La Casara is not just a dairy, but they also run a piggery. The best livestocks are destined to produce a broad selection of cold cuts and hams. All the products are handmade, to convey a strong artisanal identity.
