It was founded in 1957 with the aim to collect, mature and market Aosta Valley's most important agricultural product: the PDO FONTINA cheese.
The PDO states that the milk used for making Fontina must be produced in Aosta Valley and have the following requisites: raw, full-cream, coming from Valdaostan breeds of cow fed on local forage. The cheese-making, unchanged over the centuries, respects the milk’s original characteristics which are then passed into the cheese.
Ripening takes place in tunnels excavated out of the rock.
