In Lucca, Il Pastificio Toscano Srl produces dry pasta of durum wheat semolina and aromatized, thanks to the experience and skill of pasta makers and a careful selection of grains. The manufacturing and production processes are mostly manual using bronze wire drying : the process of drying the pasta is done at low temperatures (minimum 36 degrees C to a maximum of 53 degrees C) for minimum of 24 hours to a maximum of 72 hours. These procedures respect the natural characteristics of the grain which identifies our pasta as 100% an artisan product.
