The Colatura di Gambero Rosso® from Mazara del Vallo is a product made with a patented method, born from the idea of replicating the sailors' custom of recovering the heads of prawns that broke during fishing. It's not a fish broth or a bisque. It's not even close to anchovy sauce. The Colatura di Gambero Rosso® is creamy and has a bright colour, it is obtained from the eggs and juices of the red prawn. The salty and iodine caress of the sea meets the sweet and intriguing essence of the crustacean: the result is a concentrate of flavor and umami.
