The consortium Stelvio cheese was founded the 15 th February 2008 in Bolzano. His role is that of a recognized association as regards to the production and marketing of the Stelvio PDO cheese. This cheese is the only South Tyrolean cheese, which since 2007 has received the protected designation of origin (PDO) mark. It must have clear historical references that define cheese-making tradition, place of origin and the relationship of the area in which it is made to the production zones defined in the disciplinary. The production of the Stelvio cheese is historically identified since 1914.
