Next to the 18th-century villa La Montagnola, the olive mill is the beating heart of the farm. We cultivate 20 hectares of olive groves using SQNPI-certified integrated farming, producing monovarietal extra virgin oils—from the classic Moraiolo to the rare Minerva—DOP Colli Martani oils and EVO blends. We also grow cereals, legumes, and stone-ground wholemeal pasta. All agricultural by-products, like olive pomace and prunings, are reused in our biogas plant and woodchip boiler to produce renewable energy and heat in a Circular Economy approach.
