Open Fields provides consultancy services to the agri-food sector at both national and international levels, undertaking publicly and privately funded projects aimed at fostering the adoption of innovation across all stages of the supply chain. Its activities are structured around three pillars: i) technology transfer; ii) research for the development of new products and processes; and iii) the creation of research partnerships, project design, and project management. At MAISTAR project, we are developing an innovative resistant-starch-based ingredient for use in bakery products and pasta.
