Our pasta comes from top quality 100% Italian durum wheat, chosen from the best available, with a high protein and gluten value. It is grown in the Tavoliere delle Puglie and in Basilicata and is harvested thanks to supply chain projects with agreements with the farmers themselves. We transform it into semolina using low-grinding mills that do not stress the flours. Then the semolina is turned in Basilicata, at
900 meters above sea level, where our pasta masters mix it with cold spring water from the neighboring mountains to preserve the nutritional values and the initial proteins.
