The fasolaro fishing method involves the use of a hydraulic dredge, consisting of a metal cage that collects the mollusks on the sandy bottom, over which it is dragged. Caught in the Adriatic at depths of 10-20 meters, they reach sizes of up to 9 cm. Immediately after delivery, the product undergoes a sorting and washing process, after which it is packaged, placed in nets, and sealed with a non-removable label to guarantee the traceability of the fresh product.
