Forty years ago, in the Hyblaean Mountains to the south of
Sicily, our history began in a land rich in culture and
gastronomic heritage, a legacy of Phoenicians, Greeks,
Romans, Byzantines, Arabs, Normans and Spaniards. These
peoples have left their mark on art, culture and cuisine,
introducing flavours and aromas that are now pillars of our
culinary tradition.
In the 1970s, Giovanni Mallia and his wife Marina,
founded Gastronomia San Giovanni, a workshop dedicated
to ready-made meals and typical Hyblaean dishes.
Launched at the outset of the new millennium was BRIULA,
a stone oven for Ragusa
