Terre di Ulivi is a producer organization with 1,100 olive grower members in the province of Foggia. The main cultivar is Peranzana, which has an average production per hectare of 60 quintals with a yield of 14 kg. The Peranzana monocultivar oil is defined as superior quality with complex but balanced characteristics. Medium fruity, with hints of tomato, almond, artichoke, and medium intensity spicy and bitter notes. Ideal for intensely flavored foods, raw and cooked vegetables, cold salads, pleasant with durum wheat bread and tomato. Excellent for use in pastry making.
