To make this 2-serving (100 g net) ready-made dish, a marinating process is used whereby the anchovies are submerged in a mixture of olive oil and vinegar. This method not only enhances the flavour of the anchovies, but also helps to soften their strong taste and texture. Thanks to the HPP treatment, the vinegar content of the marinade is drastically reduced. The anchovies are typical of the Cantabrian Sea, with a unique size and texture.
