Black rice vinegar is an oriental rice variety with dark colored grains. It is a wholemeal type rice very rich in fiber and mineral salts. There are several varieties of black rice and some are also grown in Italy.
Tradition traces the origins of black rice to China, where in past centuries it represented a rare and precious rice that farmers cultivated only for the emperor. It was a noble and exclusive food compared to the common rice with light colored grains.
For this reason, black rice is sometimes called the emperor's rice.
