Nizza Monferrato hunchback thistle slow food presidium in extra green olive oil.
The hunchback thistle is born in the sandy soils in Piedmont in Nizza Monferrato and in 8 neighboring municipalities.
The thistles, when already tall and luxuriant, are folded and covered with earth. It is here that, trying to free themselves to find the light, they swell and bend, transforming themselves into humped thistles; this is where they lose their chlorophyll, becoming very white and tender.
We have potted it in extra green olive oil and made it available for all months of the year.
