To celebrate 90 years of activity, we have brought back an ancient recipe from our great-grandfather Ernesto Mazzoleni. A meditation cheese with a rich and intense flavour, rediscovering traditional tastes.

All stages of maturation and salting are carried out using the same artisanal techniques of the past, passed down through four generations.
