Condiment made from rockfish cooked slowly with garlic lightly sautéed in extra-virgin olive oil, parsley and pepper and stored in its own cooking liquid to preserve all its aromas and yield excellent results.
White in colour, with touches of pink due to the very thin reddish skin left on the filleted fish, a flavourful addition revealing the quality of the ingredients.
