Castel San Pietro's cheese is an entirely local specialty, the result of a short seasoning that gives it a barely hinted peel, it has a tender, soft heart, a delicate flavor and an aroma of fresh butter, thanks to the use of particular selected enzymes.
To be enjoyed sliced on croutons of bread with a few slices of Golden apple or even better if combined with jams or honey, it is also ideal as a filling for cappelletti or ravioli
