A wild and slightly smoked flavor characterizes this dried deer meat.

Deer rump is artisanally sliced into thin slices, which are flavored with spices and smoked with beech wood for 24 hours. Finally, they are slowly aged for 3 to 4 days to ensure their tenderness and flavor.
