The hazelnuts are smoked in the same way and using the same process that Upstream's highly prized choice salmon is smoked: a delicate smoking process that does not cover the flavour of the hazelnuts but enhances it, made using beech wood from the Apennines in Emilia; a smoking process that Cerati himself describes as a smell that reminds him of his grandmother, when she used to light the fireplace in the mountains. Two friends experimenting, making use of their expert knowledge with the aim of creating a completely new product on the market, a new taste, something never seen or thought before.
