Extra virgin olive oil (EVO) obtained by "first cold pressing" is considered the pinnacle of olive oil production. It is a product that preserves the fruit's organoleptic and healthful properties intact, thanks to its extremely gentle processing. Although the term "first pressing" is now partly tied to tradition (since modern mills extract all the oil in a single pass), the expression identifies a very high-quality oil extracted exclusively through mechanical processes.
