The Modenese White Cow, widespread until the 1950s in the province of Modena, has been supplanted by "more productive" cattle breeds and is now in danger of extinction, together with a piece of our agronomic culture. Its superior quality milk offers an optimal ratio between fat and proteins and a high frequency of the K-caseine B gene which improves the dairy quality. We produce this precious cheese following the principles of organic farming, counting on successfully succeeding in protecting a Biodiversity so important for our history from extinction.
