The new entry in the Monograno Felicetti catalogue is a return to Italian pasta’s origins: mixed pasta, a format whose roots are lost in time, when pasta was sold loose, by weight.
Felicetti pays homage to this custom by refurbishing a group of matrices, installing the bronze inserts in an old die block still in excellent condition. The result is a package of pasta that contains six different textures, offering the palate a sensation of bygone times but new to us.
These pieces, if left alone, would never have met boiling water.
