La Pinsa has ancient origins: it was born in ancient Rome. It was the peasant pizza, made with the grains they had available. The pinsa today is made with a mixture of flours, including rice and soy that have a high protein content and a low glycemic index. The dough is highly hydrated so it has a high percentage of water in the flour. The Pinsa is digestible, light, crunchy and ready to eat in 5 minutes.
