Castagnolo® BIO is the result of the craftsmanship of pigs reared in the semi-wild state. The raw materials used in the production cycle, from the pork legs to our tanning, are strictly organic.
The ham is salted manually according to an ancient mountain tradition. The greasing is handmade by skilled artisans with a patented mixture based on organic pork fat, organic chestnut flour and salt. The maturing process takes place for a period of over 20 months in the family cellar with the exchange of natural air coming from the underlying valley.
