Another white sauce without tomato, made with farmyard animals: guinea fowl, chicken and turkey in
equal quantities. Flavoured with olives and thyme. Tasty, but delicate at the same time, a nice
variant for seasoning all types of pasta.
All ragouts are handcrafted and totally preservative-free.
We use naturally fed meats, often from pasture or even wild (as in the case of venison and roe deer) and process them according to tradition.
