Anchovies fillets from the Cantabrian Sea Queen Isabella, are caught during spring, the best time of the year. Their preparation is an art, characterized by meticulous care and precision. Each fillet is processed and cleaned by hand, carefully selected for quality and size. After light salting, the anchovies mature for about 10 months in salt; then they are packaged and preserved in high-quality sunflower oil.
