Ancient variety of durum wheat grown in Sicily in the Ragusa area, with ears of tall stem and reddish in color, from which the name derives. The semolina obtained is rich of nutrients, are mainly used for the production of typical local products such as Ragusa bread,characterized by pleasant aromas and intense flavour.
