The Aged Salmon is aged at controlled temperature and humidity, following the guideline developed by
Claudio Cerati. He’s main aim is to intensify the wide sensory perception, and, in this way, to release an
outstanding concentration of both taste and marine saltiness. These aspects are combined with a pleasant
elastic consistency perfect to be finely sliced or grated as if it was bottarga.
