Tonnarelli are a type of spaghetti originating from Lazio, very similar to their cousins, chitarrucci. However, they are distinguished by small details: they have a rounded shape, a slightly rougher texture, and according to tradition, the dough consists solely of durum wheat semolina and water. They offer a simple, rustic Roman flavor—perfect for creating a textbook Cacio e Pepe!

Bronze-drawing (trafilatura al bronzo) is a pasta-making process that determines its final texture and quality. This stands in contrast to mass industrial production, which uses Teflon molds.
