All our flours are produced with durum and soft wheat coming exclusively from the region of Sicily.
Our artisan flours contain no additives or preservatives, we use a modern cylinder system and an old natural stone mill from the late nineteenth century.
Stone grinding produces a flour with irregular grain size, rich in bran and with the
total preservation of the germ. The germ contains the noblest and most tasty part of the
semen
We combine both grinding methods with high-tech cleaning systems.
