Special cheese made from goats, raised in the wild. It has a cylindrical shape. It is compact, dry and soft but not too creamy. Inside it has white color with blue-green veins. It is aged for a minimum of 3 months. Then, it is sliced in two parts and each one is covered with organic candied clementines and almonds. So, it is matured to give it a more complex and balanced flavour
