Fior di Cardo is a semi-seasoned pecorino cheese with vegetable rennet, one of the last excellences of the Il Fiorino dairy (weight of the wheel about 1.9 kg). Produced exclusively with sheep's milk from the best pastures of the Maremma and with vegetable rennet extracted from the Cynara Cardunculus thistle.
The paste is compact and well soluble, the taste is round and balanced, the smell is medium intense and persistent.
