Blue saffron whole cow's milk cheese is a raw paste cheese. First, the key ingredient, the saffron, is added, and then the "usual" starter cultures, the selected spores of the Penicillium Roqueforti species, trigger mould growth. The ageing step occurs in a ventilated cellar, where it gets pierced. This method helps oxygen prompt the natural evolution of moulds, activating the marbling paste process. Paste its creamy and melts in the mouth. It has a sweet, delicate flavour, with saffron's note and a peculiar aftertaste of acacia honey.
