Ubriaco means 'drunk', so it is cheese soaked in wine. Traditionally semi-cooked curd from whole cow's milk from the Lessinia's mountain, near Verona. The wheel has flat faces and slightly convex sides; the paste is compact, straw-coloured without holes; it becomes rocky when it matures. The flavour is strong and decisive. So perceived in the mouth, it leaves a sensation of softness with flavours and aromas of mountain milk and mountain pasture essences. Aged develops a soft and supple texture, which ages to become firmer and crumbly. It has a flowery fragrance and a characteristic wine aroma.
