The Caprone is a semi-cooked goat cheese produced exclusively with pasteurized milk. It has a cylindrical shape and a striped rind and is slightly brownish in the crust. The paste is compact, straw-white in colour, with a delicate aroma typical of goat cheese. Goat’s milk cheese is rich in nutrients such as calcium, phosphorus, proteins, fats, and antioxidants. Thanks to its protein structures, it is more digestible than most cow cheese.
